The purpose of these publications is to provide improved understanding of the science and to give guidance on the design and operation of process heat exchangers. In many of these texts the problem of the accumulation of deposits on heat transfer surfaces is ignored or at best, dealt with through the traditional fouling resistance. It is common knowledge that this approach is severely limited and inaccurate and may lead to gross errors in design. Furthermore the very arbitrary choice of fouling resistance more than offsets the accuracy of correlations and sophisticated methods, for the application of fundamental heat transfer knowledge. Little attention was paid to the heat exchanger fouling and the associated inefficiencies of heat exchanger operation till the so-called "oil crisis" of the 1970s, when it became vital to make efficient use of available energy. Heat exchanger fouling of course reduces the opportunity for heat recovery with its attendant effect on primary energy demands. Minimizing liquid waste generation, easy separation of solutes and fast reaction rates are some of the advantages of the supercritical fluid extraction (SFE) technology over conventional solvent extraction methods. The solvation strength of supercritical C02 can be tuned by changing the density of the fluid phase, thus selective extraction and dissolution of compounds may be achieved in SFE processes. Because C02 is not regulated by the US EPA as a volatile organic compound, C02-based SFE processes are environmentally acceptable. Autolysis of Aspergillus oryzae was the research theme for my doctoral thesis. The reason why Professor Sakaguchi asked me to study the autolysis of Asp. oryzae was a somewhat practical one. He thought the flavor and taste of Japanese sake came from an autolysate of Asp. oryzae. Every day, I cultured stock strains of Asp. oryzae. After one week of culture, all I had to do was taste the cultured fluid. (I used my bero-meter, bero meaning tongue in Japanese.) Naturally, I was entirely disappointed in microbiology itself. One day in November, I found one cultivation flask in which mycelia of Asp. oryzae had completely disappeared. The night before, when I looked at the flasks, the mold was flourishing in all culture flasks. I still remember vivid pictures of bacteria thriving and moving. This comprehensive treatise, which gathered together for the first time information on this important subject, is still occasionally referenced: for example, there have been more than 10 citations per annum in the major American Chemical Society journals during 2003–2007. However, the intervening three decades (from 1980) have witnessed a massive interest in the area, as evident in the more than 3000 papers; and to bring the subject up to date was a substantial undertaking. The present volume arose from discussions during the end of 2004 with the late Ellis Horwood, who urged us to take up this challenge. Two of us (MFL and PPP, with our respective research groups; we thank our able collaborators for their contributions) have continued to publish extensively in the area.
